Sweet potato is a traditional vegetable for Thanskgiving. And this recipe covers everything...it's roasted, but it’s also mashed, and then all this creamy sweetness is offset with fragrant spices and the crunch of pecans. You've just got to try this!
PREPARATION TIME: 20 MINUTES COOKING TIME: 1 HOUR 45 MINUTES SERVES: 6 to 8
3 large sweet potatoes (about 3 pounds) 2 large eggs, lightly beaten 3 tablespoons unsalted butter 2 tablespoons packed dark brown sugar 1 teaspoon salt ½ teaspoon ground cinnamon ½ teaspoon ground ginger pinch nutmeg freshly ground black pepper ¼ cup coarsely chopped pecans Preheat the oven to 400°F. Wash the sweet potatoes well and dry with paper towels. Prick each one a few times with a fork and put them into an oiled baking pan. Bake until the sweet potatoes are tender, about 60 minutes. It may take longer depending on the shape of your potatoes. Take the potatoes out of the oven and allow to cool a little. Turn the heat of the oven down to 350F. Peel the potatoes, put the flesh into a large bowl and mash well. Add the eggs, butter, brown sugar, salt, cinnamon, ginger, nutmeg, and pepper to taste. Whisk the mixture until smooth. Oil a large casserole dish (about 8 x 8 inch) with butter. Spoon in the sweet potato and rough the top up a little with a fork. Sprinkle the pecans over the top and bake for 30 or 40 minutes. Serve straight from the casserole dish while hot.
