Pasta Carbonara Sauce Recipe



Who Can Resist This Creamy Goodness?

I have to admit I really love this pasta Carbonara sauce.

It's not something I can eat very often as it's so rich, but that's what makes it all the more special. It's such a treat to eat and so comforting.

Note:

This is just the sauce recipe. You'll need to decide on the pasta you want to use with it and how much you will need. I'd recommend spaghetti or fettucine.

The recipe will make enough for 4 people as a main course. It isn't suitable to freeze, but if you do happen to have any leftovers then take them to work for tomorrows lunch.

COOKING TIME: 10 MINUTES

olive oil
200g (7 ½ ounces) pancetta, chopped roughly (or you can use good bacon)
2 or 3 cloves of garlic, smashed and chopped
2 whole eggs (let them come up to room temperature)
2 extra egg yolks
½ cup cream
75g (about 2 ounces)of parmesan cheese, grated finely
salt and pepper

Heat a splash of the olive oil in a large, heavy frying pan over a medium heat. Add the pancetta and cook for about 4 minutes, stirring occasionally.

Add the garlic and cook for a further minute or two, stirring constantly to make sure the garlic doesn't catch and burn. The pancetta (or bacon) should have crisped up a little by now. Take the pan off the heat and remove the pancetta and garlic mix. Let it drain on some absorbent paper toweling until needed.

In a bowl, beat together the whole eggs, cream and two-thirds of the parmesan cheese. Season with a little salt and pepper.

As soon as your pasta is cooked, drained and back in its cooking pot over a low heat, add the egg mixture and pancetta and toss it gently through the pasta until it's well combined.

Just before serving, whisk the two remaining egg yolks together and stir them very lightly through the pasta. The residual heat in the pasta will cook them without forming the glue like goo you often get at restaurants.

Serve immediately with the remaining parmesan and a scattering of fresh parsley.
