Italian Style Rissoles
Quick Healthy Meals With Mince
Italian Style Rissoles are a new take on a family favorite. I've taken the good old beef rissole, used lean mince and a variety of herbs and spices from my pantry to put some life back into it!
Rissoles always make quick healthy meals when you are in a rush or not feeling inspired to cook something complicated.
And, of course, you can make up extra to freeze for another day.
Do you know what I mean by rissole?
In my family, a rissole is a meat based pattie. It's larger than a meatball, but smaller than the patties usually made up for hamburgers.
If you like you can also roll them in a lightly whisked egg and toss them in bread crumbs before frying. I'm usually in too much of a rush for that step, so I've left it out of the recipe.

PREPARATION TIME: 10 MINUTES
COOKING TIME: 15 to 20 MINUTES
MAKES: 12
500g (1 pound)lean beef mince
1 clove garlic, crushed and finely chopped
1 small onion, finely chopped
1/3 cup tomato paste
½ cup parmesan cheese
2 tablespoons fresh basil finely shredded
2 teaspoons of dried oregano or parsley
2 tablespoons of water
salt and pepper to taste
Preheat your oven to 180C (360F).
Add all the ingredients except the water into a large bowl and mix until just combined. Add some of the water, and mix in, if the mixture is still too dry add a tiny bit more.
Use dessert spoonfuls of mixture and shape into balls. Fry them quickly in oil in a heavy pan at a moderately high heat to brown them on both sides. About 2 or 3 minutes each side.
Transfer the rissoles to a lightly oiled oven tray and bake for about 10 minutes until cooked through.
serving tips:
- Serve in a hamburger bun with salad,
- Tip into a rich tomato sauce and serve with pasta,
- Try mashed potatoes steamed green beans and homemade tomato sauce.
- Make them smaller and serve them skewered on toothpicks with chilli sauce as finger food at your next party.
- Make them smaller and pop them into your kid's lunch box with some salad (and a cold pack to keep it cool).
Can be frozen.
