PREPARATION TIME: 15 MINUTES
PASTRY RESTING TIME: 30 MINUTES
MAKES: 1 PIE CASE OR TOP
2 ˝ cups all purpose flour
2 tablespoons chopped fresh parsley
1 tablespoon chopped sage
1 tablespoon chopped rosemary
1 tablespoon chopped thyme
1 teaspoon salt
˝ cup chilled unsalted butter
˝ cup chilled solid vegetable shortening
˝ cup ice water
This is easy to make using a food processor. Add the flour, herbs, and salt all at once and process until the herbs are finely chopped. Add the butter and shortening and process until the mixture resembles coarse bread crumbs.
Add a few tablespoons of the cold water and pulse. Keep adding the water until the mixture just comes together. You may not need all the water, or you may need a little more, it can vary each time you make the pastry.
Gather the dough into a ball, wrap in plastic wrap and put it into the refrigerator to chill for 30 minutes or until needed.
TIP: Use this pastry for savory pies or flans. It’s great for summer quiches or to top a turkey pie.
