Some people say they hate cooking. But we all love to eat delicious home cooked meals, right?

And of course we want our kids to eat nutritious healthy food…so how do we juggle work, running a household, raising the kids plus all the other things we do, as well as prepare good, wholesome meals for our family?

It’s just so easy to pick up the phone for yet another night of pizza, or some other fast food, that you hope will satisfy the kids (or Ravenous Beasts as they are known during the teenage years).

But hang on, you know the facts. Fast food tastes great because it’s high in salt, fat and carbohydrates. Tasty, but not healthy. How did Party Food become part of our daily menu?

There’s no need, because tonight you aren’t going to use the phone as a kitchen tool. Tonight you are going to prepare a good meal for your family and sit down at the table and eat it together.

You can do it.

There are two very important things that need to change in order for you to get into the habit of regularly having home cooked meals.

  • 1. You must get it into your head that it doesn’t take long to prepare a simple meal. Don’t believe me? There are loads quick easy dinner recipes that take 15 to 30 minutes to prepare, cook and serve. That’s less time than it takes for the fast food you ordered to arrive!
  • 2. Get the whole family involved. You may not have kids, or you may have a dozen. If you have to prepare a meal for more than just yourself, then delegate a job to whoever else is eating. Someone can set the table, make the salad, tidy the kitchen, baby-sit the youngsters, and entertain the cook.

Ok, so there is one more thing you will need to do:

Make sure you have the basic ingredients in your pantry and refrigerator for a couple of simple meals ALL THE TIME.

The easiest dinner is one made up of meat or protein of some kind and a pile of veggies.

You don’t have to be an amazing cook, but it does help to have some stuff handy in your refrigerator and pantry, and it does help to plan ahead so you can either get meat out of the freezer in the morning, or pick it up on the way home.

Probably the quickest meal I prepare for my family is grilled (broiled) chicken and a bag of mixed salad leaves.

I know it doesn’t sound glamorous, but remember, we’re exploring easy dinner recipes here. And you can perform miracles by coating the chicken in various herbs and spices. The salad leaves just need a good rinse and can be served just as they are or dressed lightly.

You can have heaps of other salad veggies added to them, like tomatoes, cucumber, avocado, onion…whatever you have in the crisper really.

If it’s too cold to face a salad, steam up a big serving of mixed veggies.

Go easy on the starchy ones like potato and sweet potato.

Melt a tiny (as in two teaspoons) amount of butter over the top, season with salt and pepper, sprinkle with herbs and you’re done.

Still within the 20 minute deadline.

What About Carbs?

Unless they are overweight, it’s fine for active kids and young teens to eat carbohydrates with every meal. Just try to make them low GI and give them some variety.

In other words, don’t just feed them white bread and pasta.

Try brown rice, wholegrain pasta, cous cous, lentils or a slice of wholegrain bread.

If you are a vegetarian, you'll need to keep up your protein intake. Some ideas include tofu slices, cheeses, cans of beans, or deliciously runny, soft poached eggs.

Meals aren’t just for stuffing in your face. They are a time of bringing the family together, sharing food, talking, and gossiping. So even if you are exhausted, if you can get quick healthy meals on the table you’ll enjoy the daily celebration of dinner with your family.
