Perfect Anytime or Christmas and Thanksgiving Side Dishes


Don't just save Crispy Roast Potatoes for Christmas or Thanksgiving side dishes, eat them anytime!

Crispy, golden, roast potatoes. Mmmm!

I love them, but there is nothing worse than bringing the steaming tray of potatoes to the table and finding they are bland, pale and uninteresting.

Here’s how to make perfect roasted potatoes every time.

PREPARATION TIME: 20 MINUTES

COOKING TIME: 45 MINUTES

SERVES: 6 to 8

4 pounds baking potatoes

1/3 cup turkey drippings or olive oil

Preheat the oven to 400°F.

Peel the potatoes and halve or quarter to give good sized chunks.

Boil in a large saucepan of plenty of salted water for about 5 minutes. They need to be a little tender but not cooked.

Drain and rough the flesh up a little with a fork.

Put the potatoes into a roasting pan with the fat or oil and roast for 30 minutes or so until crisp and golden.

Turn them several times while roasting to get an even texture.

Season with salt and pepper and sprinkle with fresh herbs, if desired and serve.
