Christmas is such an exciting time.

It seems that everyone is secretly holding their breath in anticipation of what is to come.

The presents, the decorations, the good company, and the food...magic!

Help to build the buzz by offering your guests an appetizer that will firmly set the festive mood for your Christmas dinner.

My idea of an appetizer is something small and tasty served on your best tray or platter.

It will not fill your guests, just tide them over until dinner is ready and get them into a festive frame of mind.

If you still have things to do in the kitchen, then put one guest or family member in charge of everyone's drinks and another in charge of handing around plates of the nibbles.

It helps to get everyone talking and frees you up to finish the main meal preparations.

How Many Appetizers?

This is a rough guide to how many appetizers you'll need and what quantity.

As this is just a lead in to the main meal you will only need to allow for 6 individual items or bites per person.

Expect them to eat this much in one hour. So, if dinner won't start for more than an hour you'll need to allow for more.

Dips are a little harder to gauge as people tend to just keep on..., well, dipping!

Allow one dip per 6 to 8 people, including a tray of vegetable sticks and an assortment of crackers.

TIP: Keep a couple dips spare for emergencies - save time and space by buying a few premade from the deli. You may not need them, but if dinner is delayed or you have a couple of guests who have just demolished everything in sight, you'll have something on hand to keep everyone happy.

If you have less than ten people for dinner, then 2 or 3 different appetizers will be sufficient.

For ten to twenty people you'll need 4 to 5 different appetizers.

Any more than that and I hope you've got professional caterers doing dinner for you or you'll end up in the nut house.

Suggested Easy Party Appetizers

Here are just some basic ideas to get you started:
  • Spiced mixed nuts
  • Warm vol-au-vents with a creamy filling
  • Dips with vegetable sticks and assorted crackers
  • Savory bread sticks or twists
  • Bite size pieces of quiche
  • Bite size pieces of frittata
  • Canapés of crackers topped with cheese, cold meats and herbs
  • Pate with tiny toasts
  • Warm tartlets or samosas
  • Warm, spicy meatballs on skewers or toothpicks with a dipping sauce
