Brandy Sauce

PREPARATION TIME: 5 MINUTES
COOKING TIME: 15 TO 20 MINUTES
MAKES: APPROXIMATELY 1 ½ CUPS
¼ cup sugar ½ cup water 2 egg yolks pinch of salt 2 tablespoons brandy 3 tablespoons cream, whipped Add the sugar and water to a medium sized saucepan. Put it on the heat and stir continuously while the sugar dissolves. Bring it to the boil, reduce the heat and allow it to simmer for 10 minutes. In a bowl, beat the egg yolks and salt together. Take your saucepan of sugar syrup and pour it into the eggs slowly in a thin stream beating all the while until the sauce is thick and creamy. Stir in the brandy and whipped cream. Serve immediately while still warm, or allow it to cool. Either way works well. Serve with traditional Boiled Christmas Pudding.
TIP: If you are serving this sauce cold, keep it covered in the refrigerator until needed. Then return it to room temperature. It may thicken a little. If you want to, you can make it a little runnier by stirring in a small amount of milk or thin cream.
TIP: You can always cheat by making up powdered custard or by using custard sauce from a carton and just stir in the brandy and whipped cream to taste.
