PREPARATION TIME: 5 MINUTES
COOKING TIME: NIL
MAKES: APPROXIMATELY 1 CUP
250g butter (2 x sticks of butter) 1/3 cup brown sugar, firmly packed 1 cup icing (confectioners) sugar, sifted ¼ cup brandy
Cream the butter and sugars together until it makes a smooth paste. Add the brandy a little at a time, beating well. Transfer the mixture to a serving bowl, cover and put into the refrigerator until required. It needs to chill for at least half an hour before serving. Serve with traditional Boiled Christmas Pudding or any other hot pudding you like.
